Focacia Bread

3 1/2 cups flour
1 teaspoon sugar
1 teaspoon salt
1 tablespoon instant yeast
1 cup warm water
2 tablespoon olive oil

 

1/4 cup olive oil or butter
10 fresh sage leaves
2 medium tomatoes, sliced very thin
1 onion, very thinly sliced and sauteed in 2 tablespoons butter
1 teaspoon coarse sea salt
2 garlic cloves, minced
2 tablespoons chopped chives
1/4 cup shredded Asiago cheese
Combine first six ingredients in a food processor or stand mixer and mix until dough comes together.   Knead by hand or machine until dough pulls away from bowl- about 5 minutes by hand or 60 seconds in the food processor. Form a smooth ball and cover dough with a large bowl and let rest for 5 minutes. Roll out or shape dough into a 12 inch circle and place on baking pan.
Cover loosely  and let rise in a warm place until doubled in size, about 30 minutes. Spread garlic over dough and top with remaining ingredients.
Bake at 400 degrees for 20 minutes or until lightly browned.
